I still have this game on CD. From what I remember, I had light-side Jedi who was pretty much one-shotting any enemy. Then I got to the final boss battle, and the boss (whose name I don't remember) was immune to every power I had. I dodged around the room occasionally swiping at them with my lightsabers (and watching their health regenerate back to maximum before I had the chance to hit again) for something like 3 hours taking massive damage with every hit until I finally gave up. I'm thinking about playing again because it was a fun game until that battle, but...is this one of these games that seems to have a lot of options, but there is really only one good build? Or am I just spectacularly unlucky?

When you face Malak (the final boss) you will notice all of the Jedi just floating in the room. Attack Malak until there's a cut scene of him regaining his health. After that, go around the room and attack the floating Jedi with either "throw lightsaber" or "drain health" (or it's stronger version). Then attack Malak, and he won't be able to regain any health.
That's how I've always been able to defeat him, and as far as I know, there is no "one good build" (not without cheating anyway). However, there is a trick I learned for this game.
When you start a new game only level up once (on the Endar Spire) then don't level up until you are almost out of health (because you heal when you level up). Then once you get on Dantoine (no idea if that's spelled right) and you get your first powers, then that's when you level up all you can. That way, you can get more powers and might make the game a little easier. And a final note, I found it best to focus on your melee skills whenever you level up, just because I almost always use my lightsaber. You can work on your ranged attacks if you want, that's just how I always play.

Yep, Starving11 is right. I always use throw lightsaber on the captured Jedi, and that works fine. I also tend to run around a lot to stay out of Malak's reach. Master speed is a great power to have here (and pretty much everywhere in the game) as it will not only allow you to run faster, but also to get more attacks in per round. Then, if you're still having trouble, just spam med packs. I don't usually need them before facing Malak, so by that time I have a nice collection of them sitting around.
