How would I go about editing the game's files on the Mac version (which just runs from its install package)? Is there a way to edit the underlying files?

Sorry for necroing this thread, but since there is no answer : right-click Alpha Centauri Alien Crossfire.app -> Show Package Contents -> drive_c -> GOG Games -> Sid Meier's Alpha Centauri
There you will find all the game files from the Windows version and you can do anythign Windows users can. In fact, the Mac Version is the the Windows version wrapped up in a custom version of Wine, a framework for running Windows applications on non-Windows operating systems.
