Hello everyone after spending a lot of hours researching how to enable the missing Items from the GOG version, I managed to find a way (kind of) to add them.
First of all I would like if people could send an email to the publisher to fix this. If a lot of people do it I believe they might change their mind and fix this.
Moving forward here are the missing items. I also believe some of them are not even in the Steam/Epic versions such as the Hawk Leather Jacket , Chained Fist and Two Wheeled fist because they
are kickstarter items.
Below are the items that will be added to your inventory if you install this mod:
1) Special Phonecard
2) “Burning Sandstorm” Advanced Technique Scroll
3) Ryo’s Flight Jacket (Military Jacket)
4) Kenpogi Training Wear (Black Tortoise Martial Arts Wear)
5) Blazing Kick Advanced Technique Scroll *
6) Chained Fist
7) Two Wheeled Fist
8) Hawk Leather Jacket
Here are the steps you have to follow to add them:
1) First you need to install Forklift mod. More information here:

After installing forklift you will need to create a "~mods" (without the quotation marks) folder in this location: Shenmue3/content/paks/~mods
2) Download this file from here and add it in the "~mods" folder

3) Launch the game (It should work even on existing save files) and check your inventory. If you have the items the mod is activated. If not then you must have done something wrong.
Maybe you didn't install forklift correctly.
* Very important thing to know is that you need to have the mod activated for the save file you are using. If you don't you might get the message that the game is missing
DLC's and you won't be able to load the save file, so always keep a backup.
** Also it is not possible to add the three kickstarter scrolls (Wyvern Kick , Explosive Fist and Crossing Twin Palms) even when editing the files If I try to add them I always get
the message that a DLC is missing. So I am posting this just to let people know to not add these scrolls using the debug menu because their saves will not work
