I use two monitors and the game uses the resolution of them added together and twice the height. Can't access the menu to change resolution (it's off screen). How can i fix this?

have a look in ~/.config/unity3d/Harebrained Schemes/SRHK/prefs

for
<pref name="Screenmanager Resolution Height"
<pref name="Screenmanager Resolution Width"

and change the appropriate values
