But according to to the site a CD/DVD version is needed...

Hi, I'd like to try but I don't know how to use the installer without the original cd.
I own the CD version of both Serious Sam Encounters and they works flawlessly via wine.
You can extract the binaries from the LIFG installer by running it with --keep --noexec. See my topic if you have trouble with it.

I own the original CDs and the GOG versions.

Extract the game files from the GOG release - You can install the game via WINE.

Extraction code for old Linux installer;

The First Encounter:
sh serious.sam.tfe_1.05beta3-english-2.run --noexec --target unpacked

The Second Encounter
sh serious.sam.tfe_1.05beta3-english-2.run --noexec --target unpacked

The only files that you need from the extracted Linux installer are binaries from bins.tar.bz2 file. Copy all of them to Bin folder of the game.

Install osspd-pulseaudio for sound support

Launch ssam_lnx file from Bin directory.
