Does the GOG versions include mac compatibility? I say this because the Steam versions, and other versions from other webistes have mac compatibility for Sam and Max, but the store page on GOG only mentions windows as an avaibale operating system to play the game on.

I would ideally prefer to buy it from GOG

No, GOG doesn't provide Mac versions for these games. But they can add them in the future. ;)

On Sam and Max: Hit the Road, is there anyway to exit out of the game and return to the desktop? The only way I can seem to be able to exit the game is to shut down my computer by force.

Alt-F or Ctrl-C should do the trick.

Try running the game through SCUMMVM.
