For those attempting to run RCT3 Platinum on OS X via Wine (using WIneskin WInery) and are experiencing severe frame rate issues and choppy sound, I just thought I'd take a second to post what in my case turned out to be the solution.
Wineskin Version: 2.6.2
Wine Engine: 1.9.2
OS X Version: 10.11.3
Brief version: run / install Winetricks dsound
Detailed version:
After creating the wrapper for the game:
1) Browse to the folder containing your Wineskin wrappers (Users/<userId>/Applications/Wineskin)
2) Right click on *.app (whatever you chose to name it) -> Show Package Contents
3) Run Wineskin from within the package
4) Click Advanced and select Tools at the top
5) Click WInetricks under Utilities
6) Expand the dlls category and check the box to the left of "dsound" then click Run
7) Exit Wineskin and run the game
Before doing this the sound was incredibly choppy and I'd sometimes get as low as 3 FPS (which surprisingly my GF was ok with, but I personally consider virtually unplayable). She's running it on an older 2009 MacBook Pro so it may not be an issue for newer Macs but I thought I'd post this anyway in the off chance that it might be able to save someone a couple of hours of grief.
