I previously had the CD version of RCT2 installed on my system. I then installed the GOG version, uninstalled the CD version, but when I launched the GOG version, it crashed instantly. I set the game in Windows 95 compatibility mode, which fixed the crash, but now it looks for a CD when I start it up.

I'm definitely still launching the GOG version, as I even went into the GOG folder and launched rct2.exe directly, with the same result.

1. Uninstall the game
2. Open Registry Editor (start -> run -> regedit)
3. ctrl+f and search for "Coaster" press F3 to search next
4. Delete every key which is related to Roller Coaster 2 (they all have RollerCoaster in name so you will find them easily)
5. Install the game (GOG.com version)
6 Enjoy!

Unfortunately you have to search them manually. It's very messy and the devs should be punished for that. Instead of creating one key with sub-keys they put several of them all over the place
