So I noticed both in game and in the Tracks folder a whole bunch of custom ride designs labeled u(xxxx) where x are random numbers. Any idea what these are?

They're user-created coasters (hence the 'u') that were included in the deluxe edition. I think they were from some kind of contest they had back then.

Interesting... I have the deluxe edition CD as well and there are no user-created rides.
