Wineskin will run all three at pretty much default as long as you run it in a virtual desktop (IE it's in a window, you might want to set it to the maximum resolution the game runs at instead of your whole screen because it might look ugly otherwise) so all you need to do after creating a wrapper and installing the EXE is a short change to the screen settings. AFAIK the official mac port of 3 actually runs on Wineskin even.

Now if you want to add in some custom scenarios, right click on the app after installation and all that, go to C_Drive, and there you'll find your GOG games folder to add in the files.
