Got this from GMorb on Reddit but thought was worth posting here as a backup in case Reddit ever goes down, as it's a complex process!
I followed this and got the game working, tested for about 30 minutes with no issues yet.
Guide from GMorb:
"1) From desktop mode, download the offline installer files for RE 1 (exe and bin) from GOG.
2) Download and install Lutris via the Discovery App.
3) Download eskay993’s lutris script from Github
4. Download the "Unofficial MediaKite 1.01 patch for USA" off NexusMods
5. Run lutris and add a game using the plus sign at the top and select "Install from a local install script."
5.b Drag the script file downloaded in step 3 into the lutris search bar and click install. You will see a second window prompting you to install "GOG with Classic REbirth." Click install again.
5.c Another window will pop up, and here you can modify the settings to your liking or just click continue.
5.d The next window will prompt you to locate the Resident Evil GOG setup exe, which was downloaded in step 1 and the Mediakite Patch from step 4. Drag the RE 1 exe files into the first search bar and the Mediakite Patch into the second search bar, then click install.
5.e Once again, ANOTHER window will pop up asking if you want the original experience or high quality videos. Of course, you will want to leave the settings as is and click continue. Unless you want low res videos (which defeats the purpose of Seamless HD)
Lutris will begin running the installers once it's done. Click on close, and dont launch the game just yet.
6. Download the Resident Evil HD file (654.22mb file) by teamx on ModDB
7. Go the directory where Lutris installed Resident Evil (you should know if you changed the install location in step 5.c or if you forgot you can locate the location by clicking the up arrow next to the play button in lutris, click configure and in game options you can copy and paste the location that is displayed in the search bar next to executable) and drag in all the files inside the zip file downloaded in step 6 into the root of the Resident Evil install location.
8. Download Seamless HD Full Mediakite (1.6GB) from ModDB
9. Drag all the files from the Seamless HD zip file into the root install location of Resident Evil and overwrite all files when prompted.
10. Inside the Resident Evil Install directory (where you just dragged in all the files) there will be a jpn folder inside that jpn folder theres a Players folder and inside that folder theres a file named w03.EMW rename the w03.EMW file to W03.EMW and place it in the Players folder thats inside the USA folder overwriting the old one. Delete the JPN folder, then create a link to the USA folder named JPN to mitigate crashing.
(To create a link folder, right click on any empty space in the Resident Evil install location, click on create new, select Link to file or directory, name the link jpn and link it to the USA folder. (If you don't do this, the game will crash when loading into certain areas.)
11. Inside the Movie folder on the root of the Resident Evil install location, you're going to want to rename these files overwriting the old ones.
Rename ed4 to eu4
Renamr ed5 to eu5
Rename pj to pu
Rename oj to ou
Rename stfc_b to stfc_r
Rename staf_b to staf_r
Rename stfj_b to stfj_r
Rename stfz_b to stfz_r

11.b (optional) If you’re like me and like the original capcom cubes startup video I suggest you go into the movie folder that’s on root install location of Resident Evil and go to capcom clips, cubes and copy the Capcom.mp4 file and paste it into the movie folder to overwrite the old one.
12. (This next step is thanks to Skau over in the SHDP Discord group)
Get dgVoodoo2 version 2.71.3 (NOT the latest version) from GitHub
from the dgVoodoo2 archive extract the following files:
dgvoodoo.conf
MS/x86/DDraw.dll
MS/x86/DD3DImm.dll
rename DDraw.dll to re_ddraw.dll, and move all of the files you extracted to the root of the game folder where ResidentEvil.exe is located
open dgvooodoo.conf in notepad, scroll down past the [DirectX] section, change VideoCard = internal3D to VideoCard = ati_radeon_8500 and VRAM = 256 to VRAM = 4GB. To remove the dgVoodoo watermark from your game, change dgVoodooWatermark = true to dgVoodooWatermark = false.
save the file.
13. Now go back to Lutris and click on the up arrow next to the play button, click configure, and go to runner options. Here, you disable the dgvoodoo2 option, and below, where you see DLL overrides, you will change the section that says ddraw to ddraw,d3dimm,dinput8,libwebp and save.
13.b from here, make sure you have made a shortcut to Resident Evil on Steam because we will be going into game mode.
14. Once in game mode, select resident evil and select the gear icon to go into settings, go to properties then scroll down to Game Resolution and change default to 1920x1080 and turn on the option below it called "set resolution for internal and external display"
15. Now go back to the Resident Evil menu and select the controller icon and map the R4 button to up arrow key and R5 to down arrow key so you can change the settings in the next step. Now start the game.
16. You will see a menu pop up, change resolution to 1280x960 (you can click on it till it turns blue and then use the R5 button to go down) and using the touch screen untick always boot in configure mode if you dont want to see this menu again.
(optional) You can make other changes in the configuration menu if you wish, but in my setup, i only changed vibration intensity to moderate and turned texture filtering off.
Click ok
17. You will be greeted by another window here you need to select the [Dev]Seamless HD Project (click on Resident Evil to make it turn blue and use the R5 button to go down making sure you select the [Dev]Seamless HD option.
Click ok
18. From here, you are done! You can play the game or follow the next step to bypass the menus all together.
The End!
That's it, Resident Evil Seamless HD Project is now playable with the US GOG version of the game thanks to everyone above who has helped make this possible! "
