Are you talking about the in-game cutscenes or the FMV ones? I don't think you're able to skip the in-game ones.

You can skip them. Press the button for the inventory screen.

Or does that only skip the FMs? Unsure now...

To my knowledge you can't skip the in-engine cutscenes in any version of the game.

You can in the GameCube ports, but I think that's the only one.
