FCJ installs fine.
When you run it:

a) It asks for the Red Baron 3D CD - which I have and insert
b) then it crashes - FCJ has stopped working etc

Try to run the game in window by changing the shortcut's value to:
[ "C:\Program Files (x86)\GOG.com\Red Baron Pack\Red Baron 3D\Baron.exe" -window ]

The important part is the "(space) -window"

Then you can add a Glide Wrapper to get the enhanced, Full Screen, Glide Graphics. Will have to goto preferences and set the game to Glide every time. But:

If the game runs properly, you can then probably remove the " -window" from the short cut and the game will run fine, but your menus will always be Windowed.

FCJ uses Promised Land 1 Graphics which causes trouble with Win7 Computers. And unfortunately, how Promised Land 1 is put together, you can not replace it with another Terrain mod.

If it is something else don't have a clue.

However, you do not need the CD in order to play RB3D. When asked for a CD, just click the upper righ cross six times and the game will play.
