After looking through the Rayman forum I've found a couple posts that describe the same problem I have, being that the game will only load some environment textures, leaving some a black silhouette, and others being completely gone (the graphics that is, they still have clipping while playing). I've tried changing the vertex processing but this still does nothing. I don't know what the real issue or solution is, but if someone could help I would be greatly appreciative, as I really don't want to just piss money away on a game that I can't play.

GOG don't seem to want to provide any real solution or patch to this issue and the supposed fix by enabling Vertex Processing works only for some people and most likely doesn't work anymore.
Seriously, I wanted to play this game on my laptop and it doesn't work! I guess I have to play it on my desktop...
Try running the R3_Setup_DX8.exe in the installation dir. Might help, might not.
Just in case you have 2 graphic cards on your laptop - say, an NVIDIA one and a discreet Intel Integrated Solution - you might want to use the NVIDIA one - the game just refuses to work properly with laptops' integrated graphic cards.
If you have two installed on yours, use the more powerful one to run the game - that did the trick for me. Sure, the battery will run out much faster in that case but the problem would be gone.
Then again, I believe that there is nothing you can do if you have just the Integrated one availible.
Hope that helps.

I have the same problem and I'm using desktop Intel i3-540 with integrated graphics. I guess that is the problem. Where and how I enable the vertex processing?
To fix the Rayman 3 textures locate the Ubisoft folder in the Windows folder. It's actually the only file in that folder. You just change the TnL=1 to TnL=0.
3 years later and this STILL hasn't been fixed...

I also freaking love the fact that Rayman 3 HD is not comming to PC cause "Rayman 3 works, looks and runs well on PC, already" acording to some shithead over at ubisoft.
