ImirStarseeker: If you still have trouble you could try this:
Go to pcgamingwiki.com -> Rayman 3: Hoodlum Havoc. Then go to 'Missing textures and broken graphics' and follow the steps.
I can´t post links here :S, but basically it would be this:
Fix TnL issues
Install Better Rayman 3.
Open BR3_Config.exe.
Make sure Hardware Vertex Processing is enabled.
Fix Intel Graphics
Download d3d8to9 by crosire.
Move the d3d8.dll into Rayman 3 folder.
Make sure if you have Better Rayman 3 installed that in the d3d8.ini d3d8to9 is set to 0.
I had the missing textures glitch too, and I couldn't save the change of the TnL-parameter...
But this d3d8.dll into the Rayman game folder helped me -- and now Rayman 3 plays smooth and fine on my Windows 7 notebook.
