Every now and again my game stutters, including the menu. I heard editing something in the RAYMAN.cfg fixes this but it's all scrambled and unreadable, any help would be appreciated to stop the stutters / hitches.

Go to your rayman directory. For example: C:\GOG.com\Rayman Forever\Rayman\
look for this file: dosboxRayman.conf
right click at it, choose "open file with" or something like that. Choose 'notepad'. In the [cpu] options, change "core=normal" to "core=auto".
Save and launch the game.
See if it run well now.

I tried this fix, but am still having the same problem (although mine isn't an occasional stutter - the music and graphics start running choppy as soon as I reach the main menu). Any other ideas?

Try changing the frameskip with ctrl F8 and f7 or the cpu cycles with ctrl f 12 and f11.
I knwom this because a eyar ago I used rayman gold with dosbox,and I heard this version also uses dosbox(didn't buy it yet)
