I can run 2 and 5 but the others crash and at the same point each time I start them. For 1 it is only the VGA version and it is crashing right when the Sierra logo pops up. For 3 it is immediate crash right after the DOSBox logo/splash screen. The crash for 4 is when I try to create a character as I don't have saved characters to import but I suspect it would just crash at the next step in that case. It appears to be DOSBox that is crashing however since this was all installed via the GOG installer I am starting my inquiry here.

What error message are you getting when it crashes?

I am experiencing the exact same problem. Running windows XP. Just getting the "DOSBox has encountered an error and needs to close" Error code is 0xc0000005. I have been able to circumvent the problem by dragging the relevant executables directly onto DOSBox.exe.
QFG1VGA - SCIDHUV.exe
QFG3 - SIERRA.exe
QFG4 - SIERRA.exe

I am curious if anyone has any insight as to what might be causing this, however. It is mildly irritating that the shortcuts won't work.
First thing to try, if you haven't yet, would be to uninstall the games, download a fresh copy of the installer, and install them again. Make sure they aren't going into a Program Files subfolder when you do, since that can cause problems.
