There is a bug in the file catalogue_0.png that affects the french language (in version The Sneezer 1.0 r1723 B:15 and in 1.01 r1827 B:27 too).
Every single occurrence of the letter "à" (lower-letter a-grave) is replaced with the letter "á" (lower-letter a-acute), which… doesn't exist in french! This is very (very!) distracting.
The solution is to extract the RAR archive file <install_folder>/main.dat/data/fonts/catalogue_0.png and open it in a graphic editor like GIMP. Then you will have to "physically" swap the accents above those two letters in order to put them in the same order than the capital-letters À and Á (those two are correctly placed and don't need swapping).
Once done, put back the file into the archive, launch the game, it should be alright. If not, the file catalogue_0.png was probably not saved as a valid RBG, RGBA or greyscale image. Check the file $HOME/.Prison Architect/debug.txt (sorry, don't know the Windows location, it is where your saved files are) for any reference to catalogue_0.png (there should be none if everything is fine).
Linux (debian?) users : I had to use the non-free version of rar/unrar.
