So I patched the .exe file to get a widescreen resolution of 1920x1080, and while it looks very good for the most part, the screen itself looks kind cropped. The health bar is missing, the subtitles clip through the bottom of the screen, and the whole thing looks somewhat unnaturally stretched.

Anyone figured out how to get around this problem?

You can fix the UI issues by modifying the file hardware.ini. With the steam version its located in the game directory. Apparently with the GOG version its located at

C:\Users\<Your user name>\AppData\Local\VirtualStore\Program Files (x86)\GOG.com\Prince of Persia The Sands of Time.

Change the line

CanStretchRect=1 to
CanStretchRect=0

After that, text and HUD should fit on the screen. As for the image being somewhat cropped, I'm not sure there is anything you can do about it.
