Pretty much this, the audio/music seems to be choppy and jumps, any settings or something I could do in order to remedy this?

Same issue here. Have you tried installing the Populous Unofficial 1.0.3 patch ? You can find it here: http://popre.net/downloads.php

EDIT: The choppy soundtrack is only on the main menu, the tracks in the game itself work fine.
