So, how do get Plancecape working with the GemRB engine on Windows? Does anyone have a guide for me? The guide on its official website didn't help me too much, it's mostly about using it on Linux.

What enhancements (and problems) brings the change to GemRB?

Well, they do link to this thread that shows you how to compile GemRB on Windows. This is of course a lot of work, but I can't see that they have any precompiled binaries. But why do you want to use GemRB? As they state on their site you can't even complete PS:T with the current version of GemRB, it needs a lot more development until PS:T is playable.

With time GemRB will be a great resource, maybe usefull to GoG.

Yes, cross-platform replacements of whole game engines are the way to go in he long run.
It's a lengthy process with many bumps on the road.
A prime example is ScummVM, which is essentially a collection of remade engines.
That engine runs an amazing amount of games on an equally amazing variety of devices/ OS Platforms. These fanmade projects demand a lot of resources.
Whether they those projects survive longer than the ultimate support lifetime of let's say... Windows 7 remains to be seen.
The OpenDark engine for playing the System Shock and Thief series is currently in Alpha.
I see most of the games using that engine are high on the wanted list here on gog.
Maybe the developer of OpenDark could be sponsored by by gog... in order to to satisfy the gamers here.

GemRB rocks. Currently I am playing GOG's baldurs gate on my open-pandora using GemRB. It looks definitely better than the original in wine.
But I am still playing the tutorial ;-)
I cannot get PST to work on GemRB running under Android. The installation process goes right, the game starts, the initial screens go smoothly, allowing me to choose without a single flaw but when the game starts the main screen is all blue, and I can only see the bar where the menu buttons and the character portraits are.

And, moreover, if I try to load a game saved in a computer (GemRB would not let me save any game) it loads ok but the same blue screen appears.

Any ideas about why this happens?
I have the same problem :( I tryed to play Planescape Torment on my HTC Desire with GemRB and i see only blue part of screen and can nothing more :(

EDIT: I've resolved!!!
in the GemRB.cfg all the CD's folder have to point on the /data/ folder:
if you have put the Torment folder in app-data/net.sourceforge.gemrb/Torment, the CD's folder have to point to ./Torment/data/

It's works!!!

Thanks very much for the answer, I gave up trying to make PST run under Android and the solution was so simple I didn't even thought about it!
There is a LOT of PST specific code missing from GemRB just fyi.
Thank you Fertal! I've been looking all over for this answer and was especially pleased to find it on the the good old GOG! Stellar work.
An updates?
This GemRB config works for me, running GemRB version 0.8.4 on Arch Linux. The only thing I haven't got to work is fullscreen mode. Playing windowed for now. Note, I've not yet played through the game, so not sure which parts of the game are implemented and working correctly in GemRB.
