So a while ago I purchased PoE and put it in my backlog folder, no big deal.
I would like to play it now, but I'm really confused about what I have and what I'm missing:

If I go to store page from my library menu, it says I have the "definitive edition", and the "Deadfire" DLC. Sounds good.
Then I read that the definitive edition includes "The white march". Sounds good as well, but on the store page the client is prompting me to BUY the white march, so it's as if I DON'T have it.

So how do I get a full game? How do I navigate this mess of sequels, editions, expansions and dlcs? Whose house do I burn down for making this hell of a situation?

Definitive Edition has everything. You don't have to buy anything else. The White March store page is for those who have only the base PoE. System treats it as a separate product and that's why it tells you that you don't have it. I have the same problem with The Witcher 3 for example. Despite the fact that I have GOTY edition, the separate expansion packs store pages don't tell me that I already have them. I agree that this should be corrected, because it can lead to misunderstandings and make people to buy things they already have.

Awesome, thanks a lot. Is there some in-game way I could check as well, just to be sure? Maybe something like the expansion-specific quests in the journal of the Witcher 3?

There are three icons in the bottom right corner of the screen in the game menu. The first one is for base PoE, the rest are for White March DLC's. If all are highlighted, this means you have both expansions. If you use offline installers however be sure to check whether the DLC's have separate installers or not. There's a possibility that they aren't included in the main PoE installer and have to be installed separately. I don't own the Definitive Edition, so I can't tell you if the DLC's are installed automatically with the base game.
