I don't know much about Macs, but I would make sure all drivers are up to date. I know on a different game I had fan/heat issues until I properly upgraded my Nvidia GPU drivers to the latest version. I wish I could help more, but that's all I can think of.

Contrary to what it seems, Pillars is pretty heavy on the CPU (not so much on the GPU). I had the same problem on a Core i5 laptop where the fan would start going crazy and still it would get super hot.

On a macbook air I had the same problem with Wasteland 2, but managed to limit the framerate to 30 doing some magic with the options and that kept it cooler. I don't know if it's possible to do that on Pillars of Eternity though.

Short version: the game is too heavy on the CPU and the fan can't keep up cooling the CPU.

Thank you, jonridan. I was able to play with PoE on my very old Mac (2009, with a core 2 duo): the game was of course not so beatiful, but now with my new computer... Strange!
