I noticed you can hire adventurers from the tavern. Should I do this or is it better to wait for more NPCs?

Why not both? If you feel like you're missing a class, you won't really lose much aside from money and minor XP (both of which you'll have in heaps by the end of the game) and you might find some interesting combinations if you toy around with the system a bit.

Well said! I already four in my party, so with a hireling I can still get another. I wish Baldur's Gate had something like this.

the game npcs give you better story but a hireling can be custom built so if you really need say a thief now then a hireling is the way to go... drop them off once you don't need them
