Either the manual or the readme file says that certain elements of the game aren't present on Very Easy mode. I don't really play the game for a challenge--I just like building and watching the cities develop. I would like to just go ahead and play on Very Easy, but I don't want to lose out on features.

Does anyone know what is actually missing on Very Easy?

There aren't any vital parts missing. It's extremely hard or unlikely that you will experience a plague due to lack of food/water/health access. You won't have to worry about crime, and it takes longer for buildings to burn or collapse. Or any other negative effect to occur. Like the gods being mad at you for not having a festival. So you need more buildings to keep everything running smoothly.
