One thing I'm unsure of is when I'm sneaking around and knocking people out: what does X+XP (Infiltration 50%) mean? I'm only getting half the exp for not being in combat?

Yes you get half the XP fot killing enemies in Infiltration mode.

If you're getting combat experience then you're sneaking wrong.
