This is how to run Phantasmagoria under MacOS X without VMware/Parallels:
Step 1: Install Boxer under MacOS X. It is a DOSBOX version with a nice MacOS-like interface: http://boxerapp.com/
Step 2: Install the GOG version of Phantasmagoria under Windows (Bootcamp, another machine, VMware)
Step 3: Go back to OS X. Open Boxer. Drag your C:\Program Files\GOG.com\Phantasmagoria folder into the "Drop games here to install them" icon in Boxer
Step 4: After the files finish copying, double-click the Phantasmagoria icon in Boxer. Select SIERRA.EXE as the executable, click Yes to make this choice the default and the game should run!
From now on simply open Boxer and double-click Phantasmagoria to play. Option+Enter toggles full-screen mode, Have fun.
