Can someone just outline how to get "started" in a game, and I'll probably figure it out from there. Should I buy goods and ship them to other cities?

Yes, that is the key tot he game. Buy low and sell at a city where you can make a profit. Just watch as you buy more the price goes up and as you sell more the price goes down.
Do not worry about buildings right off, that will come in time. You need to know what each town produces (lower cost to buy) and what each town wants (higher cost when selling). Watch the little icons near the towns and if you have the items wanted sell it there.
Also, the closer you can sell your items the less time it will take and less wear and tear on your ship(s).
Well, that is a bit of advice to start off with.

-First and foremost: I wouldn't go with the campaign, as it's pretty steep for a newcomer. You'd better be off with a custom game on Shopkeeper level, starting in Luebeck.
-As you noted, you should start by acting as a transport company for the Hanseatic League, providing cities with what they need. I also suggest concentrating on one part of the area first, and expand when you have more ships.
-Luebeck produces iron goods, and lots of it. Make sure you get as many as you can while keeping the average price below 340. Then, you can spread it over nearby cities (Stettin, Rostock, Malmö, Torun) with a nice profit.
-In Malmö, stock up with cloth (up to an average price of 250-260). You could also shop for some meat (avg. 1100-1200), which, when in high demand, sells quite well (1500-1800 apiece).
-Stettin produces much beer; you should buy it for avg. 40-41. Then, sell it to Luebeck and Rosctock (and sometimes Malmö).
-In Gdansk, you can find beer, leather, meat and wool relatively cheap, so buy those. (Avg. up to which you should buy, respectively: 40-41, 290, 1100-1200, 1100.)
-If you decide to do a "shopping spree" in the East, here's what to get and where: Skins (700) in Riga, Reval, Ladoga and Novgorod (they sell EXTREMELY good in the South); Iron goods in Stockholm and Reval; Cloth in Visby; Fish (490-500) in Ladoga and Stockholm; Pig Iron (1000-1100) in Ladoga; Beer in Novgorod; Meat in Stockholm and Reval.
-In the inns of certain cities, you can find an Informer. He will tell you (for a small fee) of the shortage of a certain type of goods in a city, which may come useful.

One more thing I forgot to add when I wrote my suggestions: once you're respected enough in your home city, you can take the missions in that city's town hall (you can find them under "Notices"). They ask you to take a certain amount of a given product to a certain city before a given date.
They are extremely profitable, because they pay a rather high AND STABLE price for every piece. For instance, Novgorod likes to ask for stacks of 7 Wool. They won't pay 1900+1770+1550+..., but 7x1700 for it.
(You have to make sure you fulfill it before time runs out, though, as you get a severe reputation hit otherwise.)

While I'm too late to offer any hints, I hope you stick with the game. I know it can be a bit daunting at first, but it really is a beautiful and addictive (and not to mention huge) experience that I'm sure you'll love when you start understanding what you're doing.

Pardon me as I necro, but I wanted to say that I am late to Patrician III - hey, it's GOG, games are cool past their sell-by date here - and the advice on this page turned my early experiments with the game from an exercise in frustration to legit stabs at playing. I'm at the butt end of the learning curve still, but at least a few elements are starting to make sense. So, a very belated thanks!
