The library says it's not available on Mac, but when you go into the game it's available as 1.0.1

No, it's not. It is still not compatible. I'm starting to think that I've made a great mistake when decided to buy it via gog.

It says "not compatible" in GoG Galaxy, but if you click "all games" and click on it there's still a download link. I'm downloading it now as well.

You're not the only one. I've felt frustrated and completely torn apart when found out that I can't download it. I play on my mac not so often(it's more ps4 and switch). I've been waiting so long just to find out that I have no possibility to play it on the day of release.

download it directly from GOG.com Galaxy must be borked still
go to GOG.com and download the Mac version from there, it'll download a small file that allows you to run and install via GOG Galaxy. Downloading it now on OS 10.14
