For height one can check, the height on the paper and the person in front of the counter with the scanner.
But for weight it seems not possible this way.

In Addition, when a customer says he wants to stay forever, but the papers says it should be only 2 weeks. How to check this?

For weight you can cross check (using the "highlight discrepancy" mode) the number shown in the bottom right of your "office desk" (the number in "kg" units) with the number on the person's paper (ID card or ID supplement or other).

For the discrepancy of the duration of their stay you can cross check (again using the "highlight discrepancy" mode) what they said to you in your conversation audio transcript (the slip of paper under the central piece on the bottom part of your office desk) with what is written on their documents.

I found it out myself, yesterday. Played it several days but never noticed the little box with the kg measures and the fact that you can get a sheet of paper with the interview statements..

But still I could not find out how to check for gender or what to do, when there is no info in the interview paper for how long the person wants to stay, instead it says just "let me in fast, bla bla.."
