I was able to fix all my hitching (and there was a lot of it) by following the instructions in an article at WCCF Tech. Google "How to Speed Up Windows 10 and Adjust Virtual Memory", and it should be the first link.
The most important note is that I had to set a custom size on the drive the game is installed on. Windows was automatically using one drive. When I set a custom size for virtual memory on BOTH drives, all the hitching went away. I can now run all Epic graphics on 2x Geforce 770, 16GB of RAM.
