Is there any way to tweak the visual settings? I would like to minimize the CRT effect as it's making the text hard to read and I feel slightly dizzy looking at it.

Yes, great question. A couple of different options. If you're using the Nox App that comes with the game, you can turn off the "interlace" mode. To do that, while the game is running, press Ctrl+Shift+I immediately followed by the number 0.

You can also change the font in the game. To do that, once you've started a game, press Tab twice, then hit 6 to get to the Options screen. Highlight "Toggle Font", press return. Then return to the game and be sure to save the game - press Q followed by 1 or 2. Then restart the game.

If neither of those options make things better for you, you can also download a different emulator. Each one looks a bit different. If you're on Mac, I'd recommend Virtual ][. If you're on Windows, I'd recommend downloading AppleWin: https://github.com/AppleWin/AppleWin
To play with one of these, you just need to go into the Applications folder for the game and drag the "HDV" file onto the emulator. There is a help video here: https://www.youtube.com/watch?v=tz1IkSXK0tQ

Turning off the interlace didn't help me and the alternate font was even worse. The text is very hard to read. For example the word Food has the first circle in o filled with pink, the 2nd o with green, and the d with pink again. In the alternate font entire letters were different colors.

I can switch it to black and white tint (ctrl+shift+t 2) or to mono (ctrl+shift+g 4-6) then I can read the text, but the game doesn't look very good, though it is readable and playable. I guess I will try a different emulator next.

Edit: I tried it with the AppleWin emulator. Graphics set to RGB had the same issue with the bleeding colors but Composite monitor or Color TV works. I will play using the Color TV option since the colors seem a little more vibrant than the Composite monitor.
I wanted to play this since the first time I saw it. Really getting some Ultima vibes from it. I may be in the minority, but I preferred the keyboard control of Ultima 1-5 more than using the mouse in the later versions. I played those on the Atari 800 (6502 chip like the Apple) and 4 and 5 on the Atari ST.

Cool, I'm glad that you were able to get it to look nice. We're really at the "mercy" of the Apple II graphics here, which has all sorts of color bleeding and only 6 colors. So there's nothing that we can actually improve, other than suggesting different settings or different emulators. I think it's one of those things that will just turn some people off, other people will just shrug and play anyway, and a few people will be into the look for nostalgia.
