This has been going on since the new version of NMS came out and now, Galaxy starts up when I kick in NMS. I don't want that and I want to know if there is a way to disable Galaxy from starting up?

Yes. Simply go to the game folder and run the "Launch No Man's Sky" shortcut there.

You can copy that shortcut to your desktop and use that instead of the default shortcurt that the game installed. The default shortcut the game installed is what's causing the Galaxy client to load.
