Is this a known bug or some other problem? The thing is, the planets including the animals, plants, etc., are recorded as discovered in the menu(discoveries section), but in-game while flying in space the planet says undiscovered.

I think it's a bug, a quirk in the display. If you reload it should display the planet info correctly. Important is what's in the Discovery menu, and it gets there as long as you save at locations.
