I'm playing this on Windows 10 64-bit. The game shows correctly if I play it in 1920x1080 resolution, but the windows and text is too small if I play it like that. If I set the resolution to 800x600 the menus are larger and the text is readable, but the edges of the screen are cut off and I can't see the quick bar or stuff at the top of the screen.

Any ideas as to what I could do, to reduce the screen res without the picture getting cut off?

Or maybe I could set it to 1920x1080 but make the UI like 5x bigger so I could read stuff?

It changes a bit depending on your video card drivers & screen.
If you have an Nvidia card, you could try going into the control panel > adjust desktop size & position > perform scaling on GPU & override scaling set by games and programs.
I play on Win 10 & a 980 GTX.
I don't need those settings for NWN1 to play at 1280 X 720 (a good compromise between resolution & text size) but I have had to in the past.
The only problem I have with NWN1, is that it's rearranged my desktop icons after I exit.

There's an option called "use high resolution font" or something similar. Check that box and you should be abke to read the text again.
