So, moments after submitting my post, I found the fix (of course).

If you run into an issue where changing the game resolution causes the screen to go black and/or a flickering cursor, just quit the game (alt F4). Restart the game, and in the graphics settings, go into Windowed mode. Make all your graphics changes and then click Apply. It'll all work. Then just switch back to Full Screen again, and you're good to go.
