Is there any way I could get rid of the guy's head bouncing around in the frame every time I walk? Is it a resolution problem? Just the head is getting on my nerves ;) I seem to be having the same resolution problems as everybody here...

I didn't notice a head bouncing around. Did you find the walking stick? Your character's walk is very wobbly until you get a stick.
I also see the guy's head bouncing around in the corner from time to time, and I did find the stick. It feels a bit like an "over the shoulder" view sometimes.
I think the face is a design decision to emulate seeing bits of your own face (in real life), however I only see it when I look directly down (in the game). It's very buggy but not often visible for me, so it may well be accentuated by certain resolutions.

I encountered a bug earlier in the game which shot me 20 feet into the air. After I landed, the face was much more visible. Hopefully a patch will arrive soon.

Maybe instead of getting a walking stick, you found a pogo stick on that shore!
I've seen a youtube vid of this issue. I'm wondering how does the game perform for you? In the vid I saw it was being played at a rather low framerate and it seemed that either the camera was lagging or the character model was spazzing out.

Seconded. I may have seen the same clip (it was part of a "Let's Play" series). In any case, I now know how the effect looks like, and I can say that it definitely didn't occur during my complete playthrough of the game, not even once.

I think it might indeed be linked to performance issues. I had no performance issues (or very few) and never had my head pop into view. The "Let's play" clip had low FPS and showed the head pop up. Of course, more data points would be needed to confirm or reject that hypothesis. :)
No head visible here. I changed FOV setting due to me having a 4:3 monitor though.
