I took it for granted from the start that everyone's default leather belt provided some protection. But I just did something out of curiosity - I removed my leader's ebony ring, and his AC didn't change at all. Then I tried identifying it, and it showed no attributes at all.

So does this mean metal accessories are useless and I've been stupid to sell ones with other attributes? And what accessories are good then? Ones with magic resistance?

Some types don't provide any bonus to statistics (like Glass), some even decrease them (like Wooden). Check out the tables :: here ::

Yes, metal accessories are useless. Sell them. The only accessories worth keeping are the stat building ones.

Thiev: the bonuses only apply to weapons and armour. Accessories aren't affected by those bonuses.

In MM3 accessories properties were treated like armor properties, but in WoX only elemental resistances and stat boosts do matter for accessories.
Just sell the ones which do nothing, it will take some time until you have more useful accessories than you can wear. Resistance bonuses are less useful than bonuses to stats, HP or SP, for your robber/ninja thieving skill boosters are very useful on the dark side.
