Now, it took me quite awhile (loads of internet searches + trial and error) to figure this out, so I wanted to share it in case anyone else has the same issue. M&M VI + VII absolutely work on the mac!
M&M VI:
I got this working with Wineskin - the trick here is the install the game using the Wrapper version: 2.5.8, and the engine: WS9Wine 1.5.10NoXInput2. Also, in "wineskin advanced -> set screen options" you have to choose "override" and set fullscreen to 640*480.
*NOTE* for some strange reason the game starts with major flickering issues, however these can be relieved by clicking the mouse before the 3DO logo appears. No joke!
M&M VII
Same story...game runs perfect when installed with Wineskin 2.5.9, using the WS9Wine 1.5.10NoXInput2 engine. For some reason this does not flicker at all, thus no clicking required!
