Hello there! :P
Well, it seems I've ran into an issue in my first run of MM7: I'd say 1/5 times I attack an enemy on the Emerald Isles I manage to score a hit, and the others I miss. I was having a fight earlier against a couple of bats: By the time I'd finally beaten them, half of my party were unconscious and my healer had spent all of his mana D:
Any idea what's up here? :O (I put a large amount of points into my characters accuracy when I originally made them too! >.<)

Maybe accuracy is only good for bows and for melee might is used. Did you dump might ?
Accuracy is good for melee and missile. Try to prevent the monsters from ganging up on you, or even getting close if you can. Equip everyone with bows, after getting them the bow skill, and stop at the edge of the area the monsters see you at, so you only deal with a few at a time who will approach or fire at you.
Emerald Isle is the start of the game. Even if you dump everything into Accuracy, you're still not going to be that accurate, relatively speaking. It helps, but very good accuracy comes later in the game. Don't worry about it, it'll come.

P.S. - You can get your stats very very high in MM series, so the 20-30 you may start out with is just that...what you start out with. ;)

Apart from Acc, also weapon skill matters. You can level up before you enter the dungeons if you do all the easy stuff first, so you can boost your weapon skills a little. There are also spells that can help you out. From spirit school. Bless increases to hit chance, and also there's this fate something, but it's one time only so rather useless.

I see! I dumped might into my Knight, but I mainly put accuracy and speed into my Thief :P
Anyway, I got my hands on a bunch of bows: Now I just lure enemies out in the open and spam arrows! >:D
