Tried every way I can think of for taming these things and then killing them but this achievement still won't unlock for some reason :/

On the Lord of the Hunt DLC, make sure you are riding a Caragath and not a Caragor.

When riding one, hold "Shift" and press "E" (Kill Mount).

yeah I know it's for tamed caragaths and not caragors, just no way of killing them seems to unlock it

I guess you will need to try doing it again on a clean run:

- First you will have to disable cloud save
- then go to %USERPROFILE%\Documents\WB Games\Shadow of Mordor\ and move that folder (Shadow of Mordor) to a different location
- this should allow you to start a clean playthrough .. give the achievement another try in that clean run and hopefully it will unlock.
