I recently injured my wrist so I'm looking for a game I can play with one hand. Would Master of Magic work? I'd ideally want a game that's fully turn-based so I can be slow with the controls and it won't matter. I also hope to avoid things like shift-clicking, as that's hard with one hand, but I do have a programmable mouse so I might be able to get around that.

The controls for MoM are done almost entirely with the mouse. I think there are a few cases where keyboard input is necessary, but they're so rare I can't recall them at the moment. So yes, MoM can be easily played with one hand.
Since it's fully turn-based, switching between keyboard and mouse isn't a problem, and it's a keypress, a right click, or a left click in every situation I can think of.
Only instances I can think of where keyboard input is needed would be when prompted for city names or the name of your wizard in character creation. I would recommend using the numeric keypad for unit movement because the path finding seems a bit erratic. That should be easy enough to mix with mouse control though.
