Hello.

I want to play in French, so I change the option from C:/Program Files (x86)/GoG.com/Little Big Adventure/ Language.exe but demarage the game, it is always in English.

Do you have the same problem and if so, how did you do to solve it?

Run it ("Language.exe") as "Administrator" then it'll work correct (I checked this).
