I'm not really seeing the usefulness of the foraging skill. It seems like it would be really useful if you could use this skill to find food like berries and stuff in trees as you go along, so if you're not near a shop/no enemies to loots/no money you can still find food to survive off.

Seems from reading other posts that there's only one place on the map where you can fish.

Are there any other uses I've missed?

You won't yield anything by fishing in the ocean or inside caves, only lakes and streams.
Foraging is a skill you can easily get by without advancing.
It's just a skill to raise if you are inclined to do so.
