In all of the games if you take the horse up into the air you can then position the camera so that you are essentially looking over the character's shoulder. You will see quite far although items in the extreme distance are greyed out but you can simply fly in that direction to see them.

You can also do this while the character is walking (say when underground) and will get a decent view if at a higher elevation - like when in Demonis or Hades.
