They move so slow in one. I hit 'B' for Box and then 'V' for wedge but I don't know how to turn them back into a fast-moving gaggle.

Well, a bit late to help you obviously, but just in case someone else needs that information : any group made using Ctrl + 1 (2, 3, etc.) will automatically move in formation - at a slower (80%) pace. To undo that, you'll need to deselect that group - that's the tricky part, since most games allow the player to do so without deselecting - and press again Ctrl + 1 (2, 3, etc.). All its units will then regain their individual (100%) moving speed... Which, yes, means that it's impossible to play with groups without accepting formations - and their benefits.
Also, remember that units (and groups) may either walk or run, with a significant difference in speed. This can be toggled on and off - press R - or simply be temporarily switched to either mode - use Ctrl - while giving orders.
All in all, I really don't find the unit speed to be inappropriate...
