I downloaded IL-2 Sturmovik and I was wondering how I actually play the game now

Have you run the gog installer? You should see Windows installer 1-5 for IL-2 in your downloads. The first part (setup_il-2_sturmovik_1946_2.0.0.6.exe) should be the exe to install the game. Run it.
If you have done that, the game should be installed on you system, simply do a search for IL-2 - if I remember right games automatically install to a Programs/GOG.com folder.

You should also get a desktop icon for launching the game. Then if I'm reading this correctly
you may want to invest in an inexpensive joystick for maximum fun.
I use the Logitec Extreme 3D pro. $30.
