Unlike original version Enhanced Edition uses proficiencies system known from Baldur's Gate 2 which is IMO very bad for this game since a lot of loot in IWD is random and it's impossible to consistently plan your characters equipment in advance. From what I found in the net only Long Swords, Axes, Warhammers, Flails/Morningstars and maybe Maces are pretty safe bets and everything else not so much. How true is that from your experience? I wanted to play a party with Swashbuckler dual wielding Short Sword/Scimitar/Katana and Fighter/Druid with Quarterstaff/Spear but if there's no exciting gear of that type in the game it's deal breaker for me.
I checked my final save and there are very good weapons of each type you listed except Katana. Maybe that's because I did not have anyone in my party that can wield a katana.

IWD:EE is a VERY easy game. Make sure that your party members can use different proficiencies so you will be able to use most of the items in the game. I mean don't give everyone longswords proficiency and you will be fine.

It is a good idea to have your fighters have a "crushing weapon" like Flails, maces or warhammers. There are lots of skeletons in this game.
