Its very frustrating.

I'm doing Dragonstone at the moment, and after big fights when my guys each have 10-15 hp left, I just want to rest but I always get some monsters instead, I understand that they wanted to make the game realistic but it can get quite annoying to quickload 5 times just to rest your party.

Anyway, just wanted to know if there is any tips you could give me concerning this problem, for example does it matter where you rest? in a room or hallways etc..

Depends what level you're on. If you're on the level where you meet Mother Egenia, you can use a convo option to rest safely with her. As well, there's a room with adventurers from Watedeep on the fourth level where they can watch over you while you rest too (same deal as Mother Egenia). Otherwise, it's generally easier (at least it seems so to me) to go up to a cleared level and rest there. Not a guarantee, but it always seems to work better for me.
I'm working on playing through IWD for the first time and I've had better success when resting in secluded areas.

For example, there was one room where I tried to rest in the courtyard and kept getting interrupted, but when I moved my party to a smaller room connected to the same courtyard, I was able to rest uninterrupted.

Also, it seems that if you rest in an intersection, you're more likely to be interrupted as opposed to resting in a dead end.

I don't know if what I've experienced has been pure chance or if the game is actually coded as such, but give it a try.
