This should work fine. Drow is generally not worth its level offset, but it's not terrible at all.

Can't go wrong with this; easy way to crush everything in your path. You can also multiclass Fighter for more feats.

Generally you want to have a decent strength on a cleric since they're solid front-liners. I wouldn't drop Dex any lower than 11, since a penalty there can be really painful. Charisma and intelligence are largely unnecessary, and you'd be better served by abandoning them to pump Str and Dex. A one level dip in fighter for weapon proficiency isn't terrible, but not needed.

The level in rogue is unnecessary. I played with a single-class wizards and just invested cross-class skill ranks into rogue skills, and I was able to disarm every trap in the game. There were a few traps that took me a few tries towards the end, but that was it, and any lock he couldn't unlock the barbarian could force open while raging.

I ran one of these and it's very underwhelming. If you are going to do it, I strongly recommend only one level of Paladin and maxing out strength. Dump intelligence, leave wisdom low, and try to fit in at least a bit of constitution.

Ranger and Rogue are very weak in IWD2 rules. Monk is pretty interesting, although it's one-dimensional. Druid is solid. With both a Sorcerer and a Wizard one good option is to drop a whole bunch of hazards on the field (webs, clouds, etc) and use an archer to pick people off.
